What's Cookin', Mama? (Recipe Swap)




If it's Monday, it must be time for "What's Cookin', Mama?"   This week's theme is
Summertime Crockpot Meals.  This kitchen gadget is great for more than cold-weather stews.  It's perfect for the summer because it doesn't heat the kitchen up.

I'll go first.

I'm making Crockpot Chicken Tacos  tonight.

Ingredients:

2 lbs frozen boneless skinless chicken breasts
1 pkg taco seasoning
tortillas and fixings

Directions:
Put Chicken and seasoning in the crockpot around lunchtime because you forgot to do this earlier. (Unless you're way better at this than I happen to be.)Crank that baby up to high.  (Low if you start in the morning.) Put on the lid and walk away.

At dinner time, shred chicken with a fork.  Put in tortilla. Add lettuce, tomatoes, salsa, etc. Enjoy!

For a fun variation, use barbecue sauce instead of taco seasoning and enjoy BBQ pulled chicken sandwiches.

Wayne recommends that I add a link to Chicken Taco Stew, so here it is.  Stew may be a bit warm this time of year, so may I recommend eating it as a dip with tortilla chips?

I'll just post mine here, as it is so simple. My kids love crockpot BBQ pulled chicken sandwiches.

At around lunchtime throw:

1 boneless, skinless chicken thigh per person and enough of your favorite BBQ sauce to just cover thighs into the crockpot.

Cook on medium until dinner. Shred the chicken with two forks and stir back into the sauce in the crockpot. Serve on buns with pickles or slaw. Could not be easier!

Try the Chicken Curry. Mild, and a real crowd pleaser.

We're Catholic, don't on a television, and plan to homeschool our kids. We don't exactly get a lot of guests to impress LOL

Okay, I admit, I don't have a recipe to share, but I must tell you that your Crock Pot Chicken Taco Stew from last year is one of my family's favorites! I highly recommend adding a link to that again on this post!

Oh my goodness, I am such a dope. I didn't see your variation for pulled BBQ chicken sandwiches in the original post. It must be the pregnancy brain. I'll do better next week with the "cook to impress" recipe!

I do that with pork ribs. At the market I go to they are very cheap.

I put a few ribs 1-2 per person in the crock pot on high, because I don't remember to do it in the morning either (if you do it in the morning put on low). Smother in favorite BBQ sauce. I serve with scalloped potatoes and spinach or broccoli (believe it or not these are my kids' favorite veggies).

WHILE I was talking to you on the phone, I put frozen chicken breasts and a whole bottle of bbq sauce in the crock pot. We had it over bread, along with the corn on the cob that my hubs' co-worker gave to us tonight. YUUUUUUMMY!
